Lentil Burritos
Ingredients
- 1 lb dried brown lentils
- 1 large onion, diced
- 6 russet potatoes, diced
- 4 cloves garlic, minced
- 7 cups chicken broth
- 1 tbs cumin
- 1 tbs chili powder
- 1 tbs onion powder
- Salt and pepper to taste
- Tortillas or however you want to eat them
Instructions
- Rinse the lentils and set aside
- Cook up the onion and the garlic in a pot
- Add the potatoes and seasonings
- Add the chicken broth
- Add the lentils
- Simmer covered for 25 minutes
- Simmer uncovered for 5 minutes
- Thicken with a corn starch slurry
