Three Cup Chicken
- 1/3 cup sesame oil
- 20 garlic cloves, minced
- 10 slices fresh ginger
- 4 thai chili peppers, dried
- 2 lb chicken thighs, diced
- 1/3 cup soy sauce
- 1/3 cup rice wine
- 3 tablespoons sugar
- 2 cups thai basil
- 1 cup green onions
- Heat sesame oil in a wok or large skillet
- Add garlic, ginger, and peppers. Stir fry for about 2 minutes.
- Add chicken and cook until it's white in color
- Add soy sauce, rice wine, and sugar. Mix thoroughly.
- Bring to a boil and then simmer uncovered for 30 minutes
- Turn the heat back to high and add thai basil and green onions. Cook for 2 minutes.
- Enjoy over some rice!
