Ham and Bean Soup
- 2.5 lbs pinto beans, dried (a bag, basically)
- 1 ham with bone in (I think 4-6lb, not sure)
- 4 cloves garlic, minced
- 2 bags celery, sliced
- 4 lb sweet onions, diced
- 3 lb carrots, peeled and sliced
- Add the dried beans to a stock pot and add water. Cover them and a couple inches more.
- Simmer the dried beans for 2 hours.
- Add all of the remaining ingredients (cubed ham, ham bone, garlic, onions, celery, and carrots)
- Add more water to cover all the ingredients if needed
- Simmer covered for 3 hours, stirring occasionally
