Taco Dip (Diet version)
- 2 packages taco seasoning
- 30 oz refried beans
- 8 oz block monterey jack cheese, cubed
- 2 cups salsa
- 1 green pepper, diced
This is a vegetarian version of Taco Dip. It cuts out the meat and cuts down the cheese, greatly reducing the calories. You can also mix the finished product with chicken soup to make something like a chicken tortilla soup.
- Heat refried beans and salsa
- Add the taco seasoning (and water per the directions on the seasoning packet)
- Once it gets heated up, add the cheese and stir until melted
