Chocolate Cupcakes
- 1 1/2 cups flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup cocoa powder
- 1/2 cup oil
- 1 cup hot water
- 2 eggs
- 2 tsp vanilla extract
- (Filling) 8 oz. cream cheese, softened
- (Filling) 1/2 cup sugar
- (Filling) 1 tsp vanilla extract
Makes ~14 cupcakes.
- Preheat oven to 350 F.
- Place cupcake liners in cupcake baking dish
- Mix all dry ingredients for the cupcake batter
- Add the wet ingredients and mix thoroughly
- In a separate bowl, mix the filling ingredients marked "(Filling)"
- Add a small layer of cupcake batter to the bottom of each cupcake wrapper
- Spoon filling on top of the batter layer
- Cover the filling for each cupcake with another layer of cupcake batter
- Bake for 25 minutes
